While many debate that the birthplace of noodles is in China, few can argue that when it comes to handmade noodles, the Chinese are the clear masters at it. With more than 200 varieties, a piece of dough can be pulled, stretched, shaved, cut, pinched, rolled, chopped, grated, flicked, or even danced into a bowl of noodles, creating a feast for the eyes as well as the belly. One of the most popular forms of handmade noodles is Knife-Shaved Noodles, where noodle strips are shaved off a large chunk of dough directly into boiling water with a specialized shaving knife. An experienced chef can work very quickly, shaving off noodles 6 inches long, 200 a minute. Sandro Falbo is the executive chef at an exlusive Italian restaurant in Hong Kong. A self proclaimed noodle lover, Sandro jumped at the opportunity to learn the ttechniques of the multitude varieties of Chinese hand made noodles.
